The High Note: Why This Recipe Works
Blondies—those butterscotch-forward cousins of brownies—are already rich and chewy, but here, we give them a citrus-kissed makeover and drizzle them with sea salt caramel that you swirl into the batter. The Premium Cannabutter doesn’t just deliver a mild high—it delivers consistency and potency. And thanks to decarboxylation (or decarb), the THC in your herb becomes active and bioavailable.
Science Corner: Why You Need to Decarb First
Before tossing your flower into butter, you must decarboxylate it. That’s just a fancy way of saying "heat it to activate it." Raw cannabis contains THCA, which is non-psychoactive. Only through heating—typically around 240°F (115°C) for 30–45 minutes—does it convert to THC, the compound that gives you the high. Skipping this step? That’s like baking cookies without ever turning the oven on.
Why I Use the ECRU Decarboxylator
Because let’s be honest: home ovens can be temperamental. ECRU’s Decarboxylator makes the whole process button-easy. Just one push, and it heats your herb evenly—no guesswork, no smell leaks (thanks to the silicon lid and smell control), and no THC wasted due to temperature spikes. Want to infuse afterward? Add your butter right in and hit go again. One device, two steps: Decarb. Infuse. Done.
The Role of Cannabutter
This recipe uses a 50/50 blend of unsalted butter and Premium Cannabutter to mellow the flavor and ensure precise dosing. If your cannabutter is strong (say, made with a 20% THC strain), 4 tablespoons will yield around 96mg THC total, which, divided across 12 blondies, gives 8mg per bar—a responsible and enjoyable dose for most users.

Add up to 2 oz (56g) of herb to the ECRU canister.
Decarb for 30 minutes (THC) or 1 hour (CBD).
Add 1 cup butter and infuse for 4 hours.
Strain and chill. Easy peasy.
Why Citrus + Caramel + Cannabis?
This trio is more than just delicious—it’s layered. The zest adds brightness that cuts through the dense chewiness of the brown sugar and cannabutter. And that salty caramel? It plays off the bitterness of the cannabis ever so slightly, enhancing rather than masking the flavor. As Samin Nosrat says, “Salt enhances flavor.” I couldn’t agree more—especially when it’s flaky sea salt like Maldon.
Recipe Recap: Cannabis-Infused Citrus-Caramel Blondies
Ingredients
Caramel
¼ cup granulated sugar
3 tbsp heavy cream
1 tbsp cold unsalted butter
½ tsp Maldon sea salt
Blondies
1 cup all-purpose flour
1 tsp kosher salt
½ tsp baking powder
4 tbsp unsalted butter, melted
4 tbsp Premium Cannabutter, melted
1 cup packed light brown sugar
2 large eggs
½ tsp finely grated orange zest
Directions
1. Make the Caramel:In a small saucepan, boil sugar with 1 tbsp of water. Wash down the sides of the pan with a wet pastry brush to prevent crystallization. Cook over medium-high until it’s a deep amber (around 5 mins). Off heat, carefully whisk in cream, butter, and Maldon salt. Let it cool.
2. Make the Blondie Batter:Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment, leaving 1-inch overhang on two sides.
In a small bowl, whisk flour, kosher salt, and baking powder. In another bowl, whisk the melted butter, Cannabutter, and brown sugar. Add eggs and zest. Stir in the flour mixture until just combined.
3. Bake:Pour batter into pan. Drizzle the caramel on top and swirl gently with a toothpick. Bake 25–30 minutes until golden and just set in the middle (a few moist crumbs on a toothpick is perfect). Cool fully before slicing.
Serving & Storing Tips
Dosage: Approx. 8mg THC per bar if you cut into 12. Adjust your butter if you want a lighter or stronger dose.
Storage: Airtight container, room temp, 3 days max. You can freeze too—just wrap tightly in foil and then bag.
Serving Suggestion: These are fantastic slightly warmed with a dollop of vanilla ice cream.
Pro Tips from a Cannachef
Want stronger potency? Infuse with a coconut oil base—it's more efficient at pulling out cannabinoids.
Avoid alcohol infusions with the ECRU device. Alcohol has a low boiling point and poses a fire risk.
Glycerin or honey work well for non-fat infusions, but for baked goods, stick with butter or oil.

"You can’t dose what you can’t measure."
That’s exactly why the ECRU Decarboxylator is my go-to. Every batch is repeatable, controlled, and odor-contained. I used to wing it with an oven and got wildly different results—sometimes too mild, sometimes “I’m going to lie on the floor for six hours” strong.
No more.
