So while zucchini isn’t getting decarbed any time soon, cannabis sure is. And it deserves the spotlight in this delightfully light, savoury, and creamy zucchini lasagna. By the end of this article, you’ll know not only why you shouldn’t decarb zucchini, but exactly how to decarb your herb the right way — using the ECRU Decarboxylator, of course — and infuse it straight into a ricotta filling or drizzle of herb oil that turns a basic veggie casserole into a functional, flavourful edible.


Can You Decarboxylate Zucchini?

Let’s Make Cannabis-Infused Zucchini Lasagna


Zucchini lasagna is already a lighter, gluten-free take on a classic comfort food. Swapping pasta for roasted zucchini makes it feel almost virtuous. Adding infused ricotta or a drizzle of canna-oil? Well, now it’s both indulgent and functional.


Here’s the Full Recipe:

Ingredients


  • 2.5 lbs zucchini, trimmed and sliced lengthwise (1/4-inch thick)

  • 3 tbsp olive oil, plus more for greasing

  • Salt & black pepper

  • 1 yellow onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tbsp tomato paste

  • Two 14.5-oz cans plum tomatoes, coarsely chopped

  • 1/8 tsp crushed red pepper

  • 1.5 cups fresh ricotta(add 1–2 tsp cannabis-infused olive oil or butter here!)

  • 1 cup grated Parmigiano-Reggiano, plus more for topping

  • 1 egg, lightly beaten

  • 1/4 cup basil, thinly sliced

  • 1 tsp thyme, minced

  • 1.75 cups provolone, grated

  • 1.5 cups mozzarella, grated


Directions


  1. Preheat oven to 375°F (190°C).Set wire racks on rimmed baking sheets. Brush zucchini slices with olive oil, salt, and pepper. Roast 40 minutes until tender and lightly golden.


  2. Make tomato sauce:In a saucepan, heat 2 tbsp olive oil. Sauté onion and garlic ~7 minutes until softened. Add tomato paste, stir 1 minute. Add tomatoes, red pepper flakes, and simmer ~20 minutes. Season to taste.


  3. Mix ricotta filling:In a bowl, stir ricotta, Parmesan, egg, basil, thyme, salt, and pepper. Optional: Add 1–2 teaspoons of your cannabis-infused oil or butter here.


  4. Assemble lasagna (increase oven to 400°F/200°C):

    • Grease a 2-quart baking dish

    • Add 3/4 cup tomato sauce

    • Layer zucchini

    • Spread 1 cup ricotta mixture

    • Sprinkle 1/3 provolone & mozzarella

    • Spoon 1 cup sauce

    • Repeat layers twice, ending with zucchini + cheese


  5. Bake on a sheet tray for 30–35 minutes, until bubbly and browned.Let cool 20 minutes before slicing — this helps set the layers and prevents oozy mess.


Infusion Dosage Tips


If using infused oil or cannabutter:

  • 1 tsp = ~5–10mg THC (depending on strain & infusion strength)

  • For beginners, keep your total dish under 50mg THC

  • With 6 servings: ~8mg per slice is a good starting point


Want to make it even easier? Infuse your olive oil or butter in the ECRU:

  • Add 2 sticks butter or 1 cup oil

  • Add decarbed herb (up to 2 oz)

  • Hit the infusion cycle — 4 hours later, it’s done
